Apple Vareniki – Russia

Dumplings are the ultimate comfort food.  This recipe is for old-fashioned apple dumplings.

Apple Vareniki (Apple Dumplings)




2 apples, peeled and chopped
1 teaspoon ground cinnamon
1 teaspoon fresh lemon juice
2 tablespoons butter, room temperature


4 cups flour
1/2 cup milk, warm
1 egg
1 egg yolk
2 tablespoon sour cream
1/2 teaspoon salt
1 teaspoon butter, room temperature

Combine the filling ingredients in a bowl and set aside.

Combine the dough ingredients to form a soft dough.  Knead until soft and pliable, not more than 15 to 20 minutes.  Cover and let rest in a warm bowl about 10 minutes.

Divide the dough in half and roll out thin.  Cut into 2-inch squares or use the rim of a large glass.

Stretch the dough slightly, spoon a teaspoon of the filling in the center, fold over, and seal the edges.  Wetting the edges helps to form a tight seal.  Repeat until you run out of ingredients.

Heat a large pot of salted water.  Cook the dumplings until they float, then gently remove from the water with a slotted spoon.  Place on a rack to drain.

To serve:  Drizzle with melted butter and serve with sour cream.  You can also sprinkle with powdered sugar if desired.
