Cheese Balls

These remind me of miniature Colombian Bunuelos, except they are baked, not fried. Russians traditionally serve them at Breakfast or Lunch.

Cheese Balls



  • 3 ounces sifted flour
  • 6 ounces water
  • 4 ounces Parmesan or other hard cheese, grated
  • 1 1/2 tablespoons butter
  • 2 eggs
  • 1 tablespoon milk
  • salt



Separate the egg yolks from the whites.

Heat water in a saucepan and add the butter.  Continue to heat until the butter is melted.  Quickly stir in the flour.  Keep the heat on and stir constantly for 4 to 5 minutes.  Remove the pan from the heat.

Stir in one yolk, then the whites, one at a time.  Stir in the grated cheese and mix thoroughly.

Grease a baking sheet with butter and sprinkle with a little flour.  Preheat oven to 400 degrees F.

Divide the dough into 12 pieces.  Shape into small balls and place on the baking sheet.  Mix the other yolk with the milk and brush the cheese balls.

Bake for about 25 minutes, turn off the oven and let the cheese balls cool in the oven.

Makes 12.
