Bitky are Russian meat patties. They are popular throughout the region and eaten often. Some version also contain bread crumbs and perhaps some garlic. They go well with mashed potatoes or buttered pasta.
- 2 pounds ground beef
- 1/2 onion, chopped fine or grated
- 2 eggs
- freshly ground black pepper
- butter, for frying
Combine the ground beef, onion, and eggs and season with salt and pepper. Form into slightly oblong patties around an inch thick.
Heat butter in a skillet over medium heat. Fry patties until cooked through, about 4 minutes per side.
Makes about 8 patties.
