Russian Bitky

Bitky are Russian meat patties.  They are popular throughout the region and eaten often.  Some version also contain bread crumbs and perhaps some garlic.  They go well with mashed potatoes or buttered pasta.


Russian Bitky



  • 2 pounds ground beef
  • 1/2 onion, chopped fine or grated
  • 2 eggs
  • salt
  • freshly ground black pepper
  • butter, for frying



Combine the ground beef, onion,  and eggs and season with salt and pepper.  Form into slightly oblong patties around an inch thick.

Heat butter in a skillet over medium heat.  Fry patties until cooked through, about 4 minutes per side.

Makes about 8 patties.

  3. When making these patties I made enough for four servings and did add the garlic and breadcrumbs as the intro mentioned. My mixture was to loose for my liking so adding the breadcrumbs pulled that together for me better. Served with mashed potatoes and store bought beef mushroom gravy. Another winner for us threeovens, thank you! Made and reviewed for the 2014 Culinary Quest – Family Picks.
