Bahamian Coconut Tart

This is a lovely dessert made with fresh coconut and a sweet dough.

Bahamian Coconut Tart

  • 40 minutes to bake


Sweet Dough Ingredients

  • 1/4 cup vegetable shortening
  • 1/4 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 cup milk
  • 1 1/2 cups flour
  • 3 tablespoons water

Coconut Tart Filling

  • 3 cups fresh coconut, finely grated
  • 1 cup sugar
  • 1 cup water
  • 2 teaspoons vanilla
  • 2 teaspoons nutmeg


  1. To prepare the coconut filling: Combine filling ingredients in a sauce pan over medium heat. Bring to a boil, then reduce heat to a simmer until liquid evaporates, about 10 minutes. Let cool.
  2. To prepare the dough: Cream together shortening and butter. Add sugar, egg, milk, and vanilla and mix well. Add the dry ingredients and mix to form a sticky dough. Knead the dough until it is stiff enough to roll.
  3. Divide the dough into two balls. Roll out one of the balls so that it covers a 9-inch pie plate. Place in the plate and fill with the filling.
  4. Roll out the other dough ball and place on top of the filling. Cut out steam vents or even do a lattice top if you are brave and talented.
  5. Bake at 350 degrees F until the crust is golden brown, about 40 minutes. Let cool 15 minutes before slicing.
