I like using Mixed Spice instead of pumpkin pie spice in baking. Never had it with coriander before and it is a nice addition. I tried this out in my oatmeal, but looking forward to using it in a spice cake.

I love mixed spice! I use it in everything: baked goods of course, coffee/(iced) tea, hot cereal, meat-especially meatballs, stirred into butter as a delicious spread for scones, etc. The only change is that I start with whole spices, lightly dry roast in a cast iron skillet then pulverize in a clean coffee mill. This is a fun twist on mixed spice – I could definitely taste how it is a bit different than the pumpkin pie or apple spice mixes I am accustomed too. I had it over oatmeal with a bit of brown sugar, but I am already thinking of other uses. Thanks for sharing! CQ4

Made as written for the Wales region of CQ4 & the Happy Campers team – When I originally picked recipes to make for the Wales region, I missed this useful-for-me recipe entirely. This type of spice mix is among many mixes I cannot get here in Iceland, so I make my own (esp for holiday occasions when we play host/hostess to several of our Icelandic family & friends who favor US holiday meals). I haven’t had the opportunity to use it yet in a recipe, but I’ll be ready to start my holiday food gifts & meal-planning when the CQ concludes. Thanks for posting this recipe to help me get prepared. 🙂

What a great spice blend. They all compliment one another perfectly. I love the kick the coriander brings to the blend. I used my motar and pestle for nice freshly ground spices. Thank you for sharing a recipe, that I will make often. Made for CQ4 – Wales.
