This salad is often served with pupusas. Plan ahead so that it can stand for two days before serving.
Curtido (El Salvadoran Cabbage Salad)
- 6 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup white wine vinegar
- 1 1/2 teaspoons black pepper
- 1/2 tablespoon dried oregano
- Coarse salt
- 1 to 2 jalapeno chiles, thinly sliced (optional)
- 1/2 water
Mix the ingredients together and place in a large airtight container. Cover and let stand at room temperature for 2 days.
