Scandinavian Egg Salad

Hey! Who doesn’t like egg salad. This one is made with a little curry powder and caperberries. If you cannot find them (my husband can’t) you can use capers.

Scandinavian Egg Salad

1/4 cup mayonnaise

1 to 2 teaspoons curry powder (depending on freshness and your taste buds)

1 tablespoon fresh lemon juice

5 large caperberries, stemmed and finely sliced (a tablespoon of capers rough chopped)

4 hard-boiled eggs, chopped

kosher salt

freshly ground black pepper

1 tablespoon fresh chives, snipped


In a large bowl, whisk together the mayonnaise, curry powder, and lemon juice. Stir in the caper berries or capers, then fold in the eggs.

Season with about 1/4 teaspoon salt and 1/8 teaspoon pepper. Garnish with chives.
