This is a Nicaraguan salad.
Black Bean and Cucumber Salad
- 1 can black beans, drained and rinsed
- 1 large cucumber, peeled and diced
- 1 tomato, diced
- 1/2 green pepper, stemmed, seeded, and diced
- 1 stalk celery, chopped
- 1/2 small red onion, chopped
- 1/8 cup olive oil
- 1/8 cup balsamic vinegar
- freshly ground black pepper
Combine all the ingredients in a bowl. Cover and refrigerate at least one hour before serving.
