  1. Let me start by saying I love taro. But, I’d never made it myself, and I probably should have followed directions. Cooking is an art form, though -right? So I did it my way. I purchased a piece of already peeled taro at an Asian grocery, and decided to cut it into french fries and boil them. Good plan but I overcooked them. Still, I fried them very carefully so they wouldn’t fall apart. My goodness, those were so good! I ate them the Quebecois way, with mayo on the side. Delicious! Thanks for posting! 2. I love tarro chips and was excited to try this recipe for Culinary Quest 2016 Azores! (Stacy G) I used a whole unpeeled taro root and boiled for 1 1/2 hours. Sadly, It was just too long. My taro kind of fell apart. That said I took the pieces and fried them anyway! The taste was fabulous, but closer to french fries than chips only because the pieces were chunky. I will be making the recipe again and cooking only one hour. I’m really glad to have found this recipe and inspiration to make my own chips instead of paying $6 a bag at the store! Thanks for posting!!
